Hey Jay, Have you tried that kind of yucca ( Y. recurvifolia ) They grow kind of fast 😀

I picked up a three gallon and a one gallon size when i was on vacation. Here is a pic of them. About how long does it take them to start forming a trunk?

Mine does not have a trunk yet, but ones your size will start to trunk in 2 or 3 years 😀 They are one of the faster trunking yuccas. Mine has also proved to be very cold hardy 😉
