Need help with an ID

I was looking for stuff that grows wild in Kansas to send to a friend. I wanted to send some stuff that grew well in Kansas. This thing was growing in an understory of tall cedar trees in field. Now this thing was just dug up and it had to have survived teens temps as it was pretty big and it has not been long since it was teens out.
It is VERY VERY VERY velvety soft. It feels like a cotton ball to the touch. It also feels like it would be so soft that it would smoosh in your hand, but it doesn't. Also, it grows almost like a head of lettuce or cabbage as you can see in the pic.
